A couple of days ago, after a long day at the zoo, I really needed a drink. I finally got over my cold (which lasted 9 days) and it was a beautifully sunny day. We had some pineapple, good rum, and of course coconut La Croix so I figured I’d shake up a cocktail for Alan and I to enjoy just before dinner. I ended up making pineapple coconut mojitos and they are delish! Trust me, if it’s been a long day or week, or maybe you just need a delicious tropical inspired cocktail to whisk you away from city life, do yourself a favor and make this cocktail!
Pineapple Coconut Mojitos
Makes 4 servings
Ingredients
1/2 cup white rum
1/2 coconut La Croix
1/2 cup smashed pineapple
2 teaspoons sugar
1 lime, quartered
Ice cubes
Mint leaves for garnish
Pineapple for garnish
Divide the pineapple, sugar, and lime wedges among 4 glasses. Using a pestle or the end of a wooden spoon, mash the pineapple, sugar, and lime together. Add some ice and top off with white rum and club soda. Swirl with a spoon and garnish with mint leaves and pineapple.
