Lemon Arugula Pizza

One of my favorite foods is pizza. I could eat it every single day and never get sick of it.  Although we love to order from Casa Bianca a local pizzeria which is AMAZING, Alan and I like to make it at home too.  Lemon arugula pizza is by far our favorite to make at home – not only because it’s delicious but it’s super easy and a great option for a quick meal.

Ingredients:

olive oil

store bought pizza dough (you only need 1/2)

sliced mozzarella

freshly grated parmesan cheese

arugula

1-2 lemons

sea salt + black pepper

Directions:

Preheat oven for 10 minutes at 475 degrees.  Using a rolling pin, roll the dough out into a circle. Drizzle olive oil on pizza pan and place dough on the pan.  Brush olive oil on the pizza dough.  Top with mozzarella and parmesan cheese (we love our pizza extra cheesy).  Place pizza in oven and bake for 8-10 minutes or until crust is golden.  Remove pizza from over and top with arugula, fresh squeezed lemon juice and salt and pepper.
